Recently, several pronouncements about the association between red meat and cancer have negatively influenced consumer’s consumption of meat in general. Unhealthy eating habits determine an increase of health care costs. Consumers need to increase their knowledge of healthy foods and diets, to be reassured about food safety, to get more information on meat quality, freshness and composition. This project concentrates on the beef meat production chain. This project delivers a consumer mobile app, that will give the consumer personalized nutritional recommendations about the consumption of beef, cooking methods, and proper conservation of the meat, as well as a real-time analysis using the Tellspec sensor that can analyze the quality of his meat. This project also aims at providing self-preventive protocols against the improper use of antibiotics and growth promoters for beef producers and retailers, as well as a consulting activity to communicate the efforts to build consumer’s trust.
This project is a collaboration between one industrial partner, two academic partners and one SME. It is spread between Italy (coordinating country), Northern Ireland, and the United Kingdom. With a wide range of expertise in complementary fields of R&D, validated by various successful national and international projects, the skills of the partners span the whole range of expertise needed to create rapid and portable monitoring tools for better control of meat quality and safety.
